Unit of Measurement
- 820 g water, 55-60C/131-140F
- 660 g PreGel Five Star Chef Eclair Mix Gluten Free - 81024
- As desired PreGel Fragolissima Arabeschi® - Whole Strawberries - 71002
- As desired PreGel Pino Pinguino® Original Arabeschi® - Chocolate Hazelnut - 82272
- As desired PreGel Coffee Crunch Arabeschi® - Coffee & Nut Crunches - 17422
Method of Preparation
- Combine Water and PreGel Eclair Mix in Bowl of stand mixer fitted with paddle attachment.
- mix on med speed for about 10 minutes.
- Allow the dough to rest for about 5-10 minutes.
- Pipe the mixture into the fryer.
- Remove it from the fryer, and toss in sugar and cinnamon.
- Serve the churros with the Arabeschi of your choice: PreGel Fragolissima Arabeschi® (Whole Strawberries) - 71002, PreGel Pino Pinguino® Original Arabeschi® (Chocolate Hazelnut) - 82272 or PreGel Coffee Crunch Arabeschi® (Coffee & Nut Crunches) - 17402.
