- 400 g premade sweet potato pie

- 1000 g heavy cream
- 150 g PreGel Happy Torte® - Neutral Frozen Mousse Base - 68338

- Frozen Pops

- as needed PreGel Graham Cracker Arabeschi® - 16272

- 1 PreGel Pavoni Frozen Pop Molds
- Sweet Potato Pie Gelato - Hot Process
- 3000 g whole milk
- 150 g cream
- 540 g sugar
- 60 g PreGel Dextrose - Sweetening Agent - 83612
- 150 g PreGel Diamant 50 - Milk Base - Hot Process - 301138
- 150 g PreGel Nonfat Dry Milk - Grade A - Low Heat - 314005
- 10 g PreGel Cinnamon Traditional Paste - 58472
- 400 g premade sweet potato pie
Method of Preparation
Sweet Potato Pie Gelato - Cold Process
- Combine all ingredients in a large plastic bucket.
- Mix well for 2-3 minutes using an immersion blender.
- Place in batch freezer and process according to the manufacturer's instructions.
Cinnamon Semifreddo
- Combine all ingredients in the bowl of a stand mixer with a whisk attachment.
- Whip until the mix reaches stiff peaks.
Frozen Pops
- Place PreGel Pavoni Frozen Pop Molds into the blast freezer on a pan and allow to freeze for fifteen minutes.
- Fill a piping bag with the Sweet Potato Pie Gelato.
- Remove the mold from the blast freezer. Fill the mold with the Sweet Potato Pie Gelato, leaving about a quarter of an inch at the top of the mold.
- Insert the wooden sticks into the mold.
- Return the mold to the blast freezer and allow the pops to harden.
- Fill the remainder of the mold with PreGel Graham Cracker Arabeschi® - 16272.
- Return the mold to the blast freezer, and allow the pops to freeze.
- Once the frozen pops have hardened, remove them from the mold and place onto a previously frozen sheet tray lined with parchment paper.
- Pipe a dollop of Cinnamon Semifreddo on top of the Sweet Potato Pie Frozen Pop.
Sweet Potato Pie Gelato - Hot Process
- Combine all ingredients in a large plastic bucket.
- Mix well for 2-3 minutes using an immersion blender.
- Heat mixture to 85°C/185°F.
- Process in a batch freezer according to the manufacturer's instructions.
