- Pumpkin Loaf
- 250 g PreGel Maxima Muffin/Cake - 82111
- 120 g canned pumpkin
- 40 g brown sugar
- 60 g water
- 40 g vegetable oil
- 1 each large egg
- 2 g salt
- 3 g ground cinnamon
- 2 g ground ginger
- Cinnamon Glaze
- 250 g powdered sugar
- 48 g water
- 15 g PreGel Five Star Chef Pannacrema Orange - 78076
- 3 g cinnamon
- 40 g PreGel CrumbOlé® Otto Caramel (Cookie Butter Crumbles) - 65542
Method of Preparation
Pumpkin Loaf
- Place all ingredients except PreGel Otto Caramel CrumbOle in the bowl of a stand mixer
- With a paddle, mix on medium speed for 3 minutes. Fold in PreGel Otto Caramel Crumbole.
- Pour into loaf pans that have been greased and floured.
- Bake at 148°C/ 300°F for 30-50 minutes (depending on size) or until golden brown and a toothpick inserted in the center comes out clean.
Cinnamon Glaze
- Whisk all of the ingredients together except PreGel Otto Caramel CrumbOle until combined.
- Pour over desired cake and sprinkle on PreGel Otto Caramel CrumbOle and allow to set.
