Method of Preparation

  1. In a pot, heat the whole milk to 40°C/104°F.
  2. Remove from heat; add PreGel 5-Star Chef Pastry Select™ Pistachio Superior Paste (Pure Pistachio) and mix until incorporated completely.
  3. If mixture cools below 40°C/104°F, reheat to 40°C/104°F.
  4. Whisk in PreGel 5-Star Chef Pastry Select™ Pronto Pannacotta (Cooked Cream) - 312118; whisk in heavy cream.
  5. Place in desired cup and place in refrigerator until set.
  6. Top with PreGel Pino Pinguino® Original Arabeschi® (Chocolate Hazelnut) - 82272.
