Pannacotta with Passion Fruit Filling

Unit of Measurement
- 250 g PreGel Five Star Chef Pronto Pannacotta (Cooked Cream) - 83514
- 600 g whole milk
- 600 g heavy cream
- as desired PreGel Passion Fruit Arabeschi® (Passion Fruit with Seeds) - 84006
Method of Preparation
- In a pot, heat the whole milk to 104°F/40°C.
- Remove from heat; whisk in PreGel 5-Star Chef Pastry Select™ Pronto Pannacotta (Cooked Cream) - 312118 and then whisk in heavy cream.
- Place in desired mold and place in refrigerator for about two hours until set.
- Garnish with PreGel Passion Fruit Arabeschi® (Passion Fruit with Seeds) - 84006 and fresh fruit.
