- 150 g heavy cream

- 100 g PreGel Cacaopat Traditional Paste (Unsweetened Chocolate) - 56522
- Mint Chocolate Chip Gelato - Hot Process
- 3000 g whole milk
- 150 g heavy cream
- 540 g sugar
- 60 g PreGel Dextrose - Sweetening Agent - 83612
- 150 g PreGel Diamant 50 - Milk Base - Hot Process - 301138
- 150 g PreGel Nonfat Dry Milk - Grade A - Low Heat - 314005
- 140 g PreGel Mint - White Traditional Paste - 59872
- PreGel Gran Stracciatella Reale Arabeschi® (Dark Chocolate) - 26506
Method of Preparation
Mint Chocolate Chip Gelato - Cold Process
- Combine all ingredients except for the PreGel Gran Stracciatella Reale Arabeschi® (Chocolate Chips) - 26502 in a large plastic bucket.
- Mix well for 2-3 minutes using an immersion blender.
- Place in batch freezer and process according to machine's instructions.
- During extraction, fold in the PreGel Gran Stracciatella Reale Arabeschi® (Chocolate Chips) - 26502.
Chocolate Semifreddo
- Warm half the cream in the microwave and add the PreGel Cacaopat Traditional Paste (Chocolate - Unsweet) - 56522, mixing until smooth.
- Add the remainder of the cream and PreGel Happy Torte® (Neutral Frozen Mousse Base) - 68338.
- Whip to full volume.
Mint Chocolate Chip Gelato - Hot Process
- Combine all ingredients except for the PreGel Gran Stracciatella Reale Arabeschi® (Chocolate Chips) - 26502 in a large plastic bucket.
- Mix well for 2-3 minutes using an immersion blender.
- Place in Hot Process machine and process according to machine's instructions.
- During extraction, fold in the PreGel Gran Stracciatella Reale Arabeschi® (Chocolate Chips) - 26502.
Final Assembly
- Fill a pre-made chocolate cookie pie crust with Mint Chocolate Chip Gelato.
- Freeze until hard and pipe Chocolate Semifreddo on top using a star tip.
- Keep in freezer until you are ready to serve.
