- 4000 g white base gelato or ice cream
- 100 g PreGel Pistachio Pure Anatolia Traditional Paste 06872
- as needed PreGel Chocolate CrumbOlé® (Chocolate Cookie Crumbles) - 64922
Method of Preparation
- Blend ingredients with immersion blender.
- Let the mix age and hydrate for ½ hour (optional).
- Pour in batch freezer and freeze.
- Upon extraction fold in PreGel Cacao CrumbOle or use to decorate the top of your pan.
- Chef Tip: For a grass texture effect, use PreGel Pronto Semifreddo, flavor with PreGel Pistachio Anatolia Traditional Paste and pipe using a grass piping tip.
