- 1000 g PreGel Maxima Sacher Mix - 49481
- 200 g sugar
- 400 g brown butter, melted and warm
- 620 g Egg whites, room temperature
Method of Preparation
- Place Maxima Sacher Mix and sugar in the bowl of a stand mixer fitted with the paddle attachment.
- Mix on medium-low speed and slowly add brown butter.
- Once all butter is added, continue mixing and slowly add egg whites.
- Continue to mix until everything is well combined.
- Pipe into a silicone mold or a buttered metal pan and bake at 190°C/375°F for 10-14 minutes.
