- 900 g cream
- 100 g milk
- 150 g PreGel Five Star Chef Fiordica Gel Evolution - 61124
- 60 g PreGel Banana Fortefrutto® - 40472
- as needed PreGel Pino Pinguino® Original Arabeschi® - Chocolate Hazelnut - 82272
- as needed PreGel Krocco Milk Arabeschi® (Chocolate Cereal Crunch) - 55302
Method of Preparation
- Combine cream, milk, PreGel Five Star Chef Fiordica Gel Evolution and PreGel Banana Fortefrutto® - 40472 in the bowl of a stand mixer and whip to desired consistency.
- Alternate layers of Banana Mousse and PreGel Pino Pinguino® Original Arabeschi® (Chocolate Hazelnut) - 82272 in desired verrine, freezing between each layer.
- Place in refrigerator to thaw before serving.
- Garnish with PreGel Krocco Milk Arabeschi
