- 30 g PreGel Green Apple Fortefrutto® - 45172
- 500 g sugar
- 60 g PreGel Dextrose - Sweetening Agent - 83612
- 150 g PreGel Nonfat Dry Milk - Grade A - Low Heat - 314005
- 150 g PreGel Diamant 50 - Milk Base - Hot Process - 301138
- 250 g PreGel Crumbolé® Classic - 64422
- as needed PreGel Apple Pie Arabeschi®-12802
Method of Preparation
Cold Process
- In a large mixing container combine the milk and heavy cream.
- Mix together the sugar, PreGel Dextrose (Sweetening Agent) - 83611 and PreGel Totalbase® (Water & Milk Base - Cold Process) - 301148.
- With an immersion blender, combine all of the liquid ingredients while slowly adding the dry ingredients.
- Mix well for 2-3 minutes.
- Process in a batch freezer according to manufacturer's directions.
- Fold in the PreGel CrumbOle Classic Arabeschi and PreGel Apple Pie Arabeschi while extracting gelato.
Hot Process
- In a large mixing container combine the milk and heavy cream.
- Mix together the sugar, PreGel Dextrose (Sweetening Agent) - 83611, PreGel Nonfat Dry Milk (Grade A, Low Heat) - 82013 and PreGel Diamant 50 (Milk Base - Hot Process) - 301138.
- With an immersion blender, combine all of the liquid ingredients while slowly adding the dry ingredients.
- Mix well for 2-3 minutes.
- Pasteurize the batch in a pasteurizer following the manufacturer's directions.
- Process in a batch freezer according to manufacturer's directions.
- Fold in the PreGel CrumbOle Classic Arabeschi and PreGel Apple Pie Arabeschi while extracting gelato.
