- Cold Process
- 1500 g water
- 1000 g mango puree
- 550 g sugar
- 50 g PreGel Dextrose - Sweetening Agent - 83612
- 100 g PreGel Mango Fortefrutto® - 47772
- 15 g PreGel SETAGEL®Vellutina® - Sorbitol Paste - 70472
- 10 g lime zest
- 100 g lime juice
- 140 g PreGel Fruttosa® - Water & Milk Base - Hot/Cold Process - 302198
Method of Preparation
- Combine all ingredients in a large mixing bucket.
- Mix well for 2-3 minutes.
- Place in batch freezer and follow the manufacturer's instructions.
- Place a frozen pop mold into the blast freezer on a pan and allow to freeze for fifteen minutes.
- Fill a piping bag with the Mango Lime Sorbetto, as prepared above.
- Remove the mold from the blast freezer. Fill the mold with the Mango Lime Sorbetto. Insert the frozen pop sticks into the mold, then clean the mold with an offset spatula.
- Return the mold to the blast freezer and allow the frozen pops to harden for at least one hour.
- Once the frozen pops have hardened, remove them from the mold and place onto a previously frozen sheet tray lined with parchment paper.
- Wrap well with plastic wrap and place in storage freezer, or place the frozen pops in display case and serve.
