Unit of Measurement

  • 500 g PreGel Five Star Chef Macaron Mix - 33124
  • 95 g warm water 50°C/122°F
  • as needed powdered food color

Method of Preparation

  1. In the bowl of an electric mixer, combine PreGel Five Star Chef Macaron Mix with food color, and mix with a paddle on low speed until incorporated.
  2. Add warm water, and beat on medium-high speed for 4 minutes.
  3. Pipe macaron batter onto a flat sheet pan lined with a Silpat.
  4. Allow to rest at room temperature for at least 1 hour.
  5. Bake at 130°C/266°F for 18 minutes, in a vented oven, with fan speed on low to medium.
  6. *If your oven does not have a vent to open, continue with standard baking instructions, plus halfway through baking, gently crack open the oven door to allow steam to escape for about 20 seconds. Close the oven door gently and continue baking per standard instructions until macarons are done.
