- Cinnamon Meringue
- 125 g PreGel Five Star Chef Albumissimo (Meringue Powder) - 71904
- 250 g water
- 300 g sugar
- 10 g PreGel Cinnamon Traditional Paste - 58472
- Green Apple Whiskey Sour
- 110 g water
- 90 g sugar
- 10 g PreGel Green Apple Fortefrutto® - 45172
- 40 g high quality whiskey
- as needed ice cubes
Method of Preparation
Cinnamon Meringue
- In a mixer with the whip attachment, combine the sugar, water and PreGel Cinnamon Traditional Paste.
- Whip together to dissolve.
- Add PreGel Five Star Chef Albumissimo to mixer and whisk by hand to dissolve powder.
- Whip on medium-high to high speed until mixture reaches full volume.
Green Apple Whiskey Sour
- Combine the water, sugar, and PreGel Green Apple Fortefrutto in a small saucepan and bring to a boil.
- Chill the green apple simple syrup completely.
- Combine the green apple simple syrup with the whiskey and the ice cubes in a cocktail shaker.
- Shake well.
- Strain into a chilled sour glass with fresh ice cubes.
- Pipe cinnamon meringue on top to fill the glass and level with a small spatula.
- Use a torch to brulee the top of the meringue and garnish with a slice of fresh green apple and a straw.
