- 1000 g PreGel Maxima Choux Mix - 81911
- 1500 g Whole milk, at 60°C/140° F
- 12 g Salt (optional)
Method of Preparation
- Preheat an oven to 450°F with the vent closed.
- Scale together the milk and salt(optional) and heat to 60°C/140° F, stirring to make sure salt is dissolved.
- Mix together all of the ingredients in the bowl of a stand mixer fitted with the paddle attachment.
- Paddle on high speed for 1 minute, reduce speed to low and mix for 4 minutes.
- Cover the mix with plastic wrap and allow it to rest for 5 minutes
- Pipe the mix onto a sheetpan lined with parchment, or silicone baking sheet.
- Place in oven and immediately drop oven temperature to 310°F. Bake for about 8-10 minutes or until choux have puffed.
- Open oven vent and continue cooking for another 20-25 minutes depending on size of choux.
