Method of Preparation

  1. Preheat an oven to 450°F with the vent closed.
  2. Scale together the milk and salt(optional) and heat to 60°C/140° F, stirring to make sure salt is dissolved.
  3. Mix together all of the ingredients in the bowl of a stand mixer fitted with the paddle attachment.
  4. Paddle on high speed for 1 minute, reduce speed to low and mix for 4 minutes.
  5. Cover the mix with plastic wrap and allow it to rest for 5 minutes
  6. Pipe the mix onto a sheetpan lined with parchment, or silicone baking sheet.
  7. Place in oven and immediately drop oven temperature to 310°F. Bake for about 8-10 minutes or until choux have puffed.
  8. Open oven vent and continue cooking for another 20-25 minutes depending on size of choux.
