Method of Preparation

Mint Gelato - Hot Process
  1. Combine all ingredients in a large mixing bucket.
  2. Mix well for 2-3 minutes.
  3. Place in Hot Process machine and follow the machine instructions.
Popsicles
  1. Place a popsicle mold into the blast freezer on a pan and allow to freeze for fifteen minutes.
  2. Fill a piping bag with the mint gelato.
  3. Remove the mold from the blast freezer. Fill the mold with the mint gelato. Insert the popsicle sticks into the mold, then clean the mold with an offset spatula.
  4. Return the mold to the blast freezer and allow the popsicles to harden for at least one hour.
  5. Once the popsicles have hardened, remove them from the mold and place onto a previously frozen sheet tray lined with parchment paper.
  6. Place the popsicles into a holding cabinet for one hour.
  7. Melt the PreGel Coriandolina® Coating - Strawberry - 90702 and PreGel Coriandolina® Coating - White Chocolate - 90502 to 30°C/86°F.
  8. Remove the popsicles from the holding cabinet and dip into the PreGel Coriandolina® Coating - Strawberry - 90702. Return them to the frozen sheet tray.
  9. Fill a small piping bag with the PreGel Coriandolina® Coating - White Chocolate - 90502 and working quickly, pipe thin stripes on the popsicles.
  10. Garnish as desired with candy canes.
  11. Return the popsicles to the holding cabinet for fifteen minutes to fully set.
  12. Place the popsicles in display case and serve.
