Instructions for Banana Cupcake
  1. Mix together all of the ingredients in a mixer fitted with the whip attachment.
  2. Whip at medium speed for 2 minutes
  3. Pipe into paper cup lined muffin tin and bake at 388°F (170°C) for 15-20 minutes.
Instructions for Banana Buttercream
  1. In a mixing bowl fitted with a whip attachment, add sugar and water.
  2. Whip until sugar is dissolved.
  3. Add PreGel Five Star Chef Albumissimo (Meringue Powder) – 71904 and whip until stiff peaks are obtained.
  4. Soften butter in a mixer using a paddle.
  5. Add butter to Meringue in small additions while mixing on low speed.
  6. Add PreGel Five Star Chef Pannacrema Banana – 77476 to Buttercream.
