Hot Process

150g cream

150g PreGel Diamant 50 – Milk Base – Hot Process – 301138
200g PreGel Banana Fortefrutto® – 40472
50g PreGel Vanilla Purissima Bean Traditional Paste (American Style Vanilla with Specks) – 23502
150g PreGel Nonfat Dry Milk – Grade A – Low Heat – 314005

Instructions

Cold Process

Combine all ingredients in a large plastic bucket.
Mix well for 2-3 minutes using an immersion blender.
Place in batch freezer and process according to machine’s instructions.
Variegate with PreGel Otto Cookie CrumbOle Arabeschi during Extraction
